Soak chickpeas in cold water overnight (or soak quickly for one hour in boiling water). Drain and pat the chickpea. Stir 1½ teaspoons baking soda per 2 cups (400 grams) of chick peas. Place the chickpeas in the cauldron, heat with medium heat for 3 minutes, then cover with plenty of cold water and boil. Lower heat to medium low, simmer for hours or until chickpea is very soft.
